This easy recipe will show you how to make an authentic lip-smacking Garlic pickle at home using the right mix of spices with a twist of ginger. Ingredients:
Garlic – 200 g
Green Chillies – 80g
Ginger – 70g
Coriander seeds – 1tsp
Fenugreek seeds – 1tsp
Cumin seeds – 1tsp
Mustard seeds – 2tsp
Fennel seeds - 2tsp
Asafoetidia – 1/2tsp
Turmeric powder – 1tsp
Chilli Powder – 3tsp
Salt – 1tsp
Natural Vinegar – 20ml
Mustard Oil – 100ml
- Peel and clean the garlic, wash peeled garlic and dry it well.
- Wash the green chilies and de-stalk and dry them. Grind the chillies into a fine paste.
- Wash the ginger, clean it, dry and peel them.
- Now Blanch it for 1 min, cool it down and let it dry on a clean cloth.
- Grind the ginger into a fine paste.
- Dry roast coriander seeds, fenugreek seeds, cumin seeds, mustard seeds, fennel seeds. Let them get cool.
- Grind all the spices into fine powder and mix with all the remaining spices.
- Heat the mustard oil and fry the garlic cloves till is gets bit golden brown.
- Add the Green chili and ginger paste and cook well it the oil separation is seen.
- Add the masala powder and cook it well till the oil separates.
- Switch off the stove and add in the vinegar. Vinegar - a natural preservative, not only gives a nice sour taste to the garlic pickle, but also increases the shelf life. Tightly cover pickle with lid and in 3-4 days garlic will get nicely blended with the spices. You can also keep in the sun for 2 days if desired.
